Ingredients
- 16 ounces cavatappi pasta
- ½ cup Clebby’s Avocado Oil
- ½ cup all-purpose flour
- 3 cups milk
- 1 cup heavy cream
- 1 tablespoon salt
- 2 cups sharp cheddar cheese, shredded
- 2 cups monterey jack cheese, shredded
- ½ cup parmesan cheese, grated
- ½ cup pasta water
Directions
- Cook pasta til package instructions for al dente. Reserve ½ cup of pasta water and drain.
- Meanwhile, heat Clebby’s Avocado Oil over medium-low heat in a saucepan. Whisk in all-purpose flour and let toast until bubbly.
- Slowly whisk in the milk about a half cup at a time. Increase the heat to medium and continue whisking until thickened, then stir in the heavy cream and salt.
- Once the sauce is thick enough to coat the back of a spoon, remove it from the heat. Stir in the shredded sharp cheddar, shredded monterey jack, and grated parmesan cheese.
- Add the cooked pasta back to the pot and pour the cheese sauce on top. Mix until well combined, then stir in the pasta water.
- Season to taste with salt and pepper, then divide among bowls.
