Ingredients

  • 16 ounces cavatappi pasta
  • ½ cup Clebby’s Avocado Oil
  • ½ cup all-purpose flour
  • 3 cups milk
  • 1 cup heavy cream
  • 1 tablespoon salt
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups monterey jack cheese, shredded
  • ½ cup parmesan cheese, grated
  • ½ cup pasta water

Directions

  1. Cook pasta til package instructions for al dente. Reserve ½ cup of pasta water and drain.
  2. Meanwhile, heat Clebby’s Avocado Oil over medium-low heat in a saucepan. Whisk in all-purpose flour and let toast until bubbly.
  3. Slowly whisk in the milk about a half cup at a time. Increase the heat to medium and continue whisking until thickened, then stir in the heavy cream and salt.
  4. Once the sauce is thick enough to coat the back of a spoon, remove it from the heat. Stir in the shredded sharp cheddar, shredded monterey jack, and grated parmesan cheese.
  5. Add the cooked pasta back to the pot and pour the cheese sauce on top. Mix until well combined, then stir in the pasta water.
  6. Season to taste with salt and pepper, then divide among bowls.
