Ingredients
- ½ cup Clebby’s Avocado Oil
- ½ cup (1 stick) butter, cubed and softened
- ¾ cup powdered sugar
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 teaspoon salt
- 2 ¼ cups all-purpose flour
- ¾ cup finely chopped pecans
- 1 cup powdered sugar, for rolling
Directions
- Preheat the oven to 325°F.
- In a bowl, beat Clebby’s Avocado Oil, butter, powdered sugar, almond extract, vanilla extract, and salt with a mixer until light and whipped, about 5 minutes.
- Gently mix in the all-purpose flour and chopped pecans.
- Chill the dough for about an hour, then portion it out with a cookie scoop and roll each piece into 2-inch balls.
- Place on a cookie sheet and bake for 15-20 minutes.
- Add the remaining powdered sugar to a shallow bowl.
- Let the cookies cool for a couple of minutes, then roll them in the powdered sugar, a few at a time. Place the cookies on a wire rack to cool completely, then roll in the powdered sugar one more time.
