Slow Roasted Citrus Salmon

Ingredients
- 1 pound salmon
- 1 lime, zested and juiced
- 1 orange, zested and juiced
- ½ cup Clebby’s Avocado Oil
- 1 tablespoon miso paste
- 1 tablespoon honey
- 1 garlic clove, grated
- 1 knob ginger, grated
- ½ red onion, thinly sliced
- 1/2 cup cilantro leaves
- Freshly cooked rice, for serving
Directions
- Preheat oven to 300°F.
- In a small bowl, combine lime zest and juice, orange zest and juice, Clebby’s Avocado Oil, miso paste, honey, grated garlic, and grated ginger.
- Add salmon to a baking dish and season with salt and pepper. Top with sliced red onion. Pour the mixture over the salmon.
- Bake for 25-30 minutes or until fish is cooked through.
- Remove fish from the oven and top with cilantro.
- Serve with freshly cooked rice.
