Slow Roasted Citrus Salmon

Ingredients

  • 1 pound salmon
  • 1 lime, zested and juiced
  • 1 orange, zested and juiced
  • ½ cup Clebby’s Avocado Oil
  • 1 tablespoon miso paste
  • 1 tablespoon honey
  • 1 garlic clove, grated
  • 1 knob ginger, grated
  • ½ red onion, thinly sliced
  • 1/2 cup cilantro leaves
  • Freshly cooked rice, for serving

Directions

  1. Preheat oven to 300°F.
  2. In a small bowl, combine lime zest and juice, orange zest and juice, Clebby’s Avocado Oil, miso paste, honey, grated garlic, and grated ginger.
  3. Add salmon to a baking dish and season with salt and pepper. Top with sliced red onion. Pour the mixture over the salmon.
  4. Bake for 25-30 minutes or until fish is cooked through.
  5. Remove fish from the oven and top with cilantro.
  6. Serve with freshly cooked rice.
