Shaved Brussel Sprouts Salad

Ingredients
- 1½ pounds Brussels sprouts, shaved thinly
- 8 ounces bacon, crumbled
- 1 large apple, finely diced
- ½ cup grated Parmesan cheese
- ½ cup toasted slivered almonds
- ½ cup dried cranberries.
Dressing
- ⅓ cup Clebby’s Avocado Oil
- 3 tablespoons apple cider vinegar
- 1 orange, juiced and zested
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup
- 1 garlic clove, grated
- 1 shallot, minced
- 1 teaspoon fresh or dried thyme
- ½ teaspoon salt
- ½ teaspoon fresh cracked black pepper
Directions
- Add all the ingredients for the dressing to a mason jar. Shake to emulsify and set aside.
- Cook bacon according to package directions until crispy. Let cool, then crumble.
- Use a mandolin or food processor affixed with a shredding disc to thinly shave Brussels sprouts.
- Add shaved Brussels sprouts to a large bowl. Top with crumbled bacon, finely diced apple, grated Parmesan cheese, toasted slivered almonds, and dried cranberries. Pour the dressing over the top and toss until the salad is fully coated. Season to taste.
