Scallion Oil Noodles

Ingredients

  • ⅓ cup Clebby’s Avocado Oil
  • ½ cup scallions, thinly sliced (about 4-5)
  • 1 tablespoon ginger, grated
  • 2 garlic cloves, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 6 ounces (2 packs) noodles of choice (knife cut, ramen, lo mein or udon)
  • ⅓ cup pasta water

Directions

  1. Add Clebby’s Avocado Oil and sliced scallions to a small skillet and bring to a simmer over medium-low heat. Cook, stirring occasionally, until most of the scallions are dark green and just starting to brown, about 8-10 minutes. Turn off the heat and stir in grated ginger, grated garlic, soy sauce, and sugar.
  2. Cook noodles according to package instructions and reserve ⅓ cup pasta water.
  3. Add cooked noodles to the skillet and toss in the sauce. Add in the reserved pasta water and toss again.

Notes

*Gluten-free option: use gluten-free noodles.
