Ingredients

  • 1 egg
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • 1 clove of garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Pinch of cayenne pepper
  • 8 ounces extra-sharp cheddar cheese, finely shredded
  • 1 (4-ounce) jar of diced pimento peppers, drained
  • Butter crackers or sliced white bread, for serving

Directions

  1. Add egg, lemon juice, dijon mustard, salt, minced garlic, garlic powder, onion powder, a pinch of cayenne pepper, and Clebby’s Vegetable Oil to a tall, wide-brimmed jar. Place an immersion blender at the bottom of the jar and blend until the mixture is smooth and thick.
  2. Spoon the mayo into a serving bowl with finely shredded cheddar cheese and drained pimento peppers. Fold the ingredients together until well combined. Season to taste with salt and pepper.
  3. Serve with butter crackers or make sandwiches on white bread.
