Ingredients
- 1 egg
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- 1 clove of garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Pinch of cayenne pepper
- 1 cup Clebby’s Vegetable Oil
- 8 ounces extra-sharp cheddar cheese, finely shredded
- 1 (4-ounce) jar of diced pimento peppers, drained
- Butter crackers or sliced white bread, for serving
Directions
- Add egg, lemon juice, dijon mustard, salt, minced garlic, garlic powder, onion powder, a pinch of cayenne pepper, and Clebby’s Vegetable Oil to a tall, wide-brimmed jar. Place an immersion blender at the bottom of the jar and blend until the mixture is smooth and thick.
- Spoon the mayo into a serving bowl with finely shredded cheddar cheese and drained pimento peppers. Fold the ingredients together until well combined. Season to taste with salt and pepper.
- Serve with butter crackers or make sandwiches on white bread.
