Ingredients

  • 1 egg
  • 1 tablespoon pickle brine
  • 1 teaspoon dijon mustard
  • ½ teaspoon salt
  • 1 clove of garlic, minced
  • 1½ cups sour cream
  • 1 packet of ranch seasoning
  • 1 cup finely chopped pickles
  • Chopped dill and chives, for garnish
  • Potato chips, for serving

Directions

  1. Add egg, pickle brine, dijon mustard, salt, minced garlic, and Clebby’s Vegetable Oil to a tall, wide-brimmed jar. Place an immersion blender at the bottom of the jar and blend until the mixture is smooth and thick.
  2. Spoon the mayo into a bowl with sour cream, ranch seasoning, and chopped pickles. Cover and refrigerate for at least an hour before serving.
  3. When ready to serve, top with fresh dill and chopped chives. Serve alongside potato chips.
