Ingredients
- 1 egg
- 1 tablespoon pickle brine
- 1 teaspoon dijon mustard
- ½ teaspoon salt
- 1 clove of garlic, minced
- ⅔ cup Clebby’s Vegetable Oil
- 1½ cups sour cream
- 1 packet of ranch seasoning
- 1 cup finely chopped pickles
- Chopped dill and chives, for garnish
- Potato chips, for serving
Directions
- Add egg, pickle brine, dijon mustard, salt, minced garlic, and Clebby’s Vegetable Oil to a tall, wide-brimmed jar. Place an immersion blender at the bottom of the jar and blend until the mixture is smooth and thick.
- Spoon the mayo into a bowl with sour cream, ranch seasoning, and chopped pickles. Cover and refrigerate for at least an hour before serving.
- When ready to serve, top with fresh dill and chopped chives. Serve alongside potato chips.
