Peanut Butter Chocolate Chip Cookie Bars

Ingredients

  • ½ cup creamy or chunky peanut butter
  • 1½ cups brown sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 8 ounces chocolate, chopped or chips
  • Flaky sea salt

Directions

  1. Preheat the oven to 350°F. Grease a 9×9 baking dish and line with parchment paper.
  2. Add Clebby’s Avocado Oil, peanut butter, brown sugar, eggs, and vanilla extract to a mixing bowl. Whisk until well combined.
  3. Add all-purpose flour, baking soda, and salt. Mix the dry ingredients into the wet ingredients until just combined, then fold in the chocolate chunks.
  4. Scoop the dough into the prepared baking dish. Spread evenly and top with additional chocolate chunks. Bake for 25-30 minutes or until just done in the center. Sprinkle with flaky sea salt while still warm, then allow to cool.
  5. Cut into squares and enjoy!

Notes

*Gluten-free option: use gluten-free flour as a substitute for all-purpose flour.
