Peach Cobbler Cake

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ⅔ cup sugar, plus 1 tablespoon
  • ½ cup Clebby’s Vegetable Oil
  • 2 eggs, room temperature
  • ¾ cup sour cream or Greek yogurt, room temperature
  • 1 ½ teaspoons vanilla extract
  • ¼ teaspoon almond extract
  • 2 cups sliced or cubed peaches, about 3 peaches

Directions

  1. Preheat oven to 350°F and grease a 9-inch springform pan with butter.
  2. Add all-purpose flour, baking powder, salt, and sugar in a medium mixing bowl. Whisk to combine.
  3. Add Clebby’s Vegetable Oill, eggs, sour cream or Greek yogurt, vanilla extract, and almond extract in a small mixing bowl. Whisk to combine.
  4. Fold the dry ingredients into the wet ingredients, mixing until just incorporated.
  5. Add about ¾ of the sliced peaches and gently fold into the batter.
  6. Spread the batter into the prepared cake pan. Top with remaining peach slices and sprinkle with about 1 tablespoon of sugar.
  7. Place the cake pan on a baking sheet (just in case it leaks) and bake for 55-60 minutes. The top will be golden brown and a inserted toothpick will come out clean when done.
  8. Let cool before slicing and serving.
