Hot Honey Peach, Avocado & Prosciutto Panzanella Salad

Ingredients

Salad

  • 3-4 peaches, sliced
  • 3 tablespoons of hot honey
  • 4 slices of sourdough, cubed
  • 2 tablespoons Avocado Oil
  • 2-3 avocados
  • 1 ball of burrata, torn into large chunks
  • 4 oz prosciutto, torn into smaller pieces
  • ¼ cup mint leaves
  • ¼ cup basil leaves

Hot Honey Peach Dressing

  • ⅓ cup Clebby’s Avocado Oil
  • 2 tablespoons champagne vinegar
  • ½ tablespoon Dijon mustard
  • ½ teaspoon salt

Directions

  1. Toss sliced peaches with hot honey and set aside.
  2. Preheat the oven to 350°F.
  3. Toss cubed sourdough with 2 tablespoons of Clebby’s Avocado Oil and season with salt and pepper. Add to a sheet pan and bake for 20 minutes.
  4. Meanwhile, pour the peach juices into a jar with Clebby’s Avocado Oil, champagne vinegar, and dijon mustard. Season with salt and pepper and shake to emulsify.
  5. Assemble salad by layering sliced peaches, sliced avocado, and croutons. Top with torn pieces of burrata and prosciutto.
  6. Garnish with mint leaves and basil leaves, then drizzle the dressing on top.
