Ingredients

  • ⅓ cup Clebby’s Avocado Oil
  • 1 large or two small heads of garlic
  • 6 tablespoons butter, room temperature
  • 1 cup grated parmesan
  • 1 baguette
  • Finely chopped parsley, for serving

Directions

  1. Preheat oven to 250°F.
  2. Peel garlic cloves and place them into a small oven-safe ramekin. Cover in Clebby’s Avocado Oil, ensuring all cloves are submerged. Add more Clebby’s Avocado Oil as needed to ensure all cloves are fully covered. Bake for 2 hours.
  3. Once the garlic cloves are fork-tender and golden, remove them from the oven and let cool.
  4. Remove the cloves from the oil and mash in a bowl. Add softened butter and mash together. Slowly add the garlic-infused avocado oil to the mashed garlic butter, about a tablespoon at a time until fully incorporated. Season to taste with salt and pepper and transfer to the fridge to let the mixture firm up.
  5. When ready to bake bread, preheat oven to 350°F.
  6. Slice bread in half lengthwise. Spread butter on both cut sides then top with parmesan cheese. Bake for 30 minutes.
  7. Once golden remove from the oven. Let cool slightly before slicing and garnishing with chopped parsley.

Notes

Gluten-free option: use gluten-free baguette.
