Ingredients
- ⅓ cup Clebby’s Avocado Oil
- 1 large or two small heads of garlic
- 6 tablespoons butter, room temperature
- 1 cup grated parmesan
- 1 baguette
- Finely chopped parsley, for serving
Directions
- Preheat oven to 250°F.
- Peel garlic cloves and place them into a small oven-safe ramekin. Cover in Clebby’s Avocado Oil, ensuring all cloves are submerged. Add more Clebby’s Avocado Oil as needed to ensure all cloves are fully covered. Bake for 2 hours.
- Once the garlic cloves are fork-tender and golden, remove them from the oven and let cool.
- Remove the cloves from the oil and mash in a bowl. Add softened butter and mash together. Slowly add the garlic-infused avocado oil to the mashed garlic butter, about a tablespoon at a time until fully incorporated. Season to taste with salt and pepper and transfer to the fridge to let the mixture firm up.
- When ready to bake bread, preheat oven to 350°F.
- Slice bread in half lengthwise. Spread butter on both cut sides then top with parmesan cheese. Bake for 30 minutes.
- Once golden remove from the oven. Let cool slightly before slicing and garnishing with chopped parsley.
Notes
Gluten-free option: use gluten-free baguette.
