Ingredients
- 1 can black beans, drained and rinsed
- 1 can black-eyed peas, drained and rinsed
- 2-3 Roma tomatoes, finely chopped (seeds removed)
- ½ red onion, finely diced
- 1 red pepper, finely diced
- 1 orange pepper, finely diced
- 1 yellow pepper, finely diced
- 1 jalapeno, finely diced
- 1 cup corn
- ⅓ cup Clebby’s Avocado Oil
- 2 tablespoons red wine vinegar
- 3 tablespoons lime juice
- 2 grated garlic cloves
- 1 tablespoon hot honey
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon dried oregano
- ½ cup cilantro, finely chopped
- 2 avocados, diced (optional)
- Tortilla chips, for serving
Directions
- To a large bowl, add black beans and black-eyed peas.
- Chop all veggies to be about the same size as the beans.
- Add tomatoes, red onion, red, orange, and yellow pepper, jalapeno, and corn to the large bowl with the beans.
- Combine Clebby’s Avocado Oil, red wine vinegar, lime juice, hot honey, salt, pepper, and dried oregano in a glass measuring cup. Stir to incorporate then pour over the ingredients in the bowl.
- Toss to combine and season to taste. Cover then transfer to the fridge to marinate for at least 1 hour.
- When ready to serve, stir in chopped cilantro and diced avocado. Serve with tortilla chips.
Notes
*Gluten-free option: use gluten-free tortilla chips.
