Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can black-eyed peas, drained and rinsed
  • 2-3 Roma tomatoes, finely chopped (seeds removed)
  • ½ red onion, finely diced
  • 1 red pepper, finely diced
  • 1 orange pepper, finely diced
  • 1 yellow pepper, finely diced
  • 1 jalapeno, finely diced
  • 1 cup corn
  • 2 tablespoons red wine vinegar
  • 3 tablespoons lime juice
  • 2 grated garlic cloves
  • 1 tablespoon hot honey
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon dried oregano
  • ½ cup cilantro, finely chopped
  • 2 avocados, diced (optional)
  • Tortilla chips, for serving

Directions

  1. To a large bowl, add black beans and black-eyed peas.
  2. Chop all veggies to be about the same size as the beans.
  3. Add tomatoes, red onion, red, orange, and yellow pepper, jalapeno, and corn to the large bowl with the beans.
  4. Combine Clebby’s Avocado Oil, red wine vinegar, lime juice, hot honey, salt, pepper, and dried oregano in a glass measuring cup. Stir to incorporate then pour over the ingredients in the bowl.
  5. Toss to combine and season to taste. Cover then transfer to the fridge to marinate for at least 1 hour.
  6. When ready to serve, stir in chopped cilantro and diced avocado. Serve with tortilla chips.

Notes

*Gluten-free option: use gluten-free tortilla chips.
