Ingredients

  • 1 package Clebby’s Confetti Cake Mix
  • ½ cup cream cheese, softened
  • ½ cup Clebby’s Vegetable Oil
  • 2 eggs, lightly beaten, softened

Pink Frosting

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 drop of red food coloring
  • Sprinkles

Directions

  1. Preheat oven to 350°F and line two cookie sheets with parchment or a silicone baking mat.
  2. In a bowl, beat cream cheese until smooth. Add the bottle of included Clebby’s Vegetable Oil (½ cup) and eggs and mix until smooth. Add the package of Clebby’s Confetti Cake Mix and stir until combined.
  3. Use a cookie scoop to portion the dough onto the prepared cookie sheets.
  4. Bake for 10-12 minutes.
  5. In another bowl, add softened butter. Use beaters to mix until smooth. Beat in the powdered sugar about a half cup at a time. Then mix in the vanilla extract, salt, and a drop of red food coloring.
  6. Once the cookies have cooled completely, spread a thin layer of frosting on top of each cookie and top with a pinch of sprinkles.
