Ingredients
- 1 package Clebby’s Confetti Cake Mix
- ½ cup cream cheese, softened
- ½ cup Clebby’s Vegetable Oil
- 2 eggs, lightly beaten, softened
Pink Frosting
- ½ cup unsalted butter, softened
- 2 cups powdered sugar
- ½ teaspoon vanilla extract
- Pinch of salt
- 1 drop of red food coloring
- Sprinkles
Directions
- Preheat oven to 350°F and line two cookie sheets with parchment or a silicone baking mat.
- In a bowl, beat cream cheese until smooth. Add the bottle of included Clebby’s Vegetable Oil (½ cup) and eggs and mix until smooth. Add the package of Clebby’s Confetti Cake Mix and stir until combined.
- Use a cookie scoop to portion the dough onto the prepared cookie sheets.
- Bake for 10-12 minutes.
- In another bowl, add softened butter. Use beaters to mix until smooth. Beat in the powdered sugar about a half cup at a time. Then mix in the vanilla extract, salt, and a drop of red food coloring.
- Once the cookies have cooled completely, spread a thin layer of frosting on top of each cookie and top with a pinch of sprinkles.
