Chinese Chicken Salad

Ingredients
- 1 rotisserie chicken, shredded
- 2 small heads of romaine, shredded
- 1 small head of cabbage, shredded
- 2 large carrots, shredded
- 1 cup green onions, finely chopped
- 2 cups mandarin orange slices, about 4-5 oranges, sliced in half if large
- 1 cup toasted nuts (almonds, cashews) or wonton chips
- ¼ cup toasted sesame seeds
Ginger Soy Dressing
- 1 large knob of ginger
- 2-3 garlic cloves
- ⅓ cup Clebby’s Avocado Oil
- 2 tablespoons sesame oil
- ¼ cup maple syrup or honey
- ⅓ cup rice vinegar
- ¼ cup soy sauce
- Pinch of salt, fresh cracked pepper, and pinch of red pepper flakes
Directions
- Add all the ingredients for the ginger soy dressing to a blender and process until smooth. Season to taste, then set aside.
- Shred rotisserie chicken and add to a large bowl. Toss with a little dressing until the pieces are fully coated.
- Add shredded lettuce, shredded cabbage, shredded carrots, chopped green onion, mandarin orange slices, toasted almonds, and sesame seeds to the bowl.
- Pour the dressing over the ingredients and toss until the ingredients are fully dispersed.
- Divide among bowls to serve and garnish with toasted sesame seeds and sliced green onion.
