Ingredients

  • 1 pound lean ground beef
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 shallot, minced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2 cups beef broth
  • 1½ cups milk
  • 8 ounces of macaroni
  • 2 cups grated sharp cheddar
  • Chopped chives, for garnish

Directions

  1. Heat a large sauté pan over medium-high heat. Add a drizzle of neutral oil, once it begins to smoke, add the ground beef. Season with salt and pepper. Break up the ground beef with a wooden spoon and cook until browned and no pink remains.
  2. Stir in smoked paprika, chili powder, and tomato paste, and cook for a couple of minutes. Remove the cooked meat into a bowl and set aside.
  3. Reduce the heat to medium-low and add Clebby’s Avocado Oil with minced shallot and garlic. Season with salt and pepper and cook until translucent. Stir in flour and cook for a couple of minutes.
  4. Pour in beef broth and milk. Add the cooked ground meat back into the skillet and bring to a simmer. Once boiling, add in macaroni and cook until al dente, about 6 minutes, stirring occasionally. The sauce will be thickened when done.
  5. Remove the pan from the heat, then stir in the shredded sharp cheddar cheese.
  6. To serve, divide among bowls and garnish with chopped chives.
