Ingredients
- 1 pound lean ground beef
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- ⅓ cup Clebby’s Avocado Oil
- 1 shallot, minced
- 4 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons flour
- 2 cups beef broth
- 1½ cups milk
- 8 ounces of macaroni
- 2 cups grated sharp cheddar
- Chopped chives, for garnish
Directions
- Heat a large sauté pan over medium-high heat. Add a drizzle of neutral oil, once it begins to smoke, add the ground beef. Season with salt and pepper. Break up the ground beef with a wooden spoon and cook until browned and no pink remains.
- Stir in smoked paprika, chili powder, and tomato paste, and cook for a couple of minutes. Remove the cooked meat into a bowl and set aside.
- Reduce the heat to medium-low and add Clebby’s Avocado Oil with minced shallot and garlic. Season with salt and pepper and cook until translucent. Stir in flour and cook for a couple of minutes.
- Pour in beef broth and milk. Add the cooked ground meat back into the skillet and bring to a simmer. Once boiling, add in macaroni and cook until al dente, about 6 minutes, stirring occasionally. The sauce will be thickened when done.
- Remove the pan from the heat, then stir in the shredded sharp cheddar cheese.
- To serve, divide among bowls and garnish with chopped chives.
