Ingredients

  • 3-4 bananas
  • 1 egg, lightly beaten
  • 1 package of Clebby’s Banana Bread Mix
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Cooking spray
  • Maple syrup, fresh banana slices, chopped macadamia nuts, for serving

Directions

  1. Preheat oven to 350°F and spray a 9×5 loaf pan with cooking spray.
  2. Mash the bananas. Stir in the egg and the bottle of included Clebby’s Vegetable Oil (½ cup). Add the package of Clebby’s Banana Bread Mix and stir until combined. Pour the banana bread batter into the prepared loaf pan.
  3. Bake for 50-60 minutes, until an inserted toothpick comes out clean.
  4. Let the banana bread cool completely, preferably overnight.
  5. When ready to make French toast, slice the banana bread into ½-inch thick pieces.
  6. Add eggs, milk, vanilla extract, cinnamon, and a pinch of salt to a shallow bowl. Whisk until incorporated.
  7. Heat a skillet over medium-low heat with a tablespoon of butter until melted.
  8. Dip a slice of banana bread in the custard, flip to coat the other side.
  9. Add the coated banana bread to the skillet, cooking in batches. Dip the bread in the custard as you go to prevent it from becoming too soggy.
  10. Cook until golden brown on each side, about 5 minutes.
