Ingredients
- 3-4 bananas
- 1 egg, lightly beaten
- ½ cup Clebby’s Vegetable Oil
- 1 package of Clebby’s Banana Bread Mix
- 2 eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- Pinch of salt
- Cooking spray
- Maple syrup, fresh banana slices, chopped macadamia nuts, for serving
Directions
- Preheat oven to 350°F and spray a 9×5 loaf pan with cooking spray.
- Mash the bananas. Stir in the egg and the bottle of included Clebby’s Vegetable Oil (½ cup). Add the package of Clebby’s Banana Bread Mix and stir until combined. Pour the banana bread batter into the prepared loaf pan.
- Bake for 50-60 minutes, until an inserted toothpick comes out clean.
- Let the banana bread cool completely, preferably overnight.
- When ready to make French toast, slice the banana bread into ½-inch thick pieces.
- Add eggs, milk, vanilla extract, cinnamon, and a pinch of salt to a shallow bowl. Whisk until incorporated.
- Heat a skillet over medium-low heat with a tablespoon of butter until melted.
- Dip a slice of banana bread in the custard, flip to coat the other side.
- Add the coated banana bread to the skillet, cooking in batches. Dip the bread in the custard as you go to prevent it from becoming too soggy.
- Cook until golden brown on each side, about 5 minutes.
