Ingredients
Cake
- 1 pound apples, thinly sliced and chopped (about 3 cups)
- 3 cups all-purpose flour
- 2 teaspoons pumpkin spice blend or cinnamon
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1½ cups brown sugar
- ⅓ cup Clebby’s Vegetable Oil
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon vanilla extract
Topping
- ¾ cup sugar
- 1 teaspoon pumpkin spice blend or cinnamon
- 2 tablespoons butter, melted
Directions
- Preheat oven to 325°F and grease a 9×13 baking pan.
- Slice apples into thin slices, then cut slices into thirds. Set aside.
- In a medium bowl, add all-purpose flour, pumpkin spice blend, or cinnamon, salt, and baking soda. Whisk to combine.
- In a large mixing bowl, add brown sugar and eggs. Beat until light brown and thick, about 3 minutes. Mix in vanilla extract and Clebby’s Vegetable Oil.
- Fold in the dry ingredients with a rubber spatula, followed by the buttermilk. Then fold in the thinly sliced, chopped apples.
- Pour batter into the prepared baking pan.
- Combine sugar, pumpkin spice blend or cinnamon, and melted butter into a small bowl.
- Spread the sugar mixture over the top of the batter.
- Bake for 50 minutes, until an inserted toothpick comes out clean.
- Let the cake cool before slicing and serving.
Notes
*Gluten-free option: use gluten-free flour as a substitute for all-purpose flour.
