Ingredients

Cake

  • 1 pound apples, thinly sliced and chopped (about 3 cups)
  • 3 cups all-purpose flour
  • 2 teaspoons pumpkin spice blend or cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1½ cups brown sugar
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

Topping

  • ¾ cup sugar
  • 1 teaspoon pumpkin spice blend or cinnamon
  • 2 tablespoons butter, melted

Directions

  1. Preheat oven to 325°F and grease a 9×13 baking pan.
  2. Slice apples into thin slices, then cut slices into thirds. Set aside.
  3. In a medium bowl, add all-purpose flour, pumpkin spice blend, or cinnamon, salt, and baking soda. Whisk to combine.
  4. In a large mixing bowl, add brown sugar and eggs. Beat until light brown and thick, about 3 minutes. Mix in vanilla extract and Clebby’s Vegetable Oil.
  5. Fold in the dry ingredients with a rubber spatula, followed by the buttermilk. Then fold in the thinly sliced, chopped apples.
  6. Pour batter into the prepared baking pan.
  7. Combine sugar, pumpkin spice blend or cinnamon, and melted butter into a small bowl.
  8. Spread the sugar mixture over the top of the batter.
  9. Bake for 50 minutes, until an inserted toothpick comes out clean.
  10. Let the cake cool before slicing and serving.

Notes

*Gluten-free option: use gluten-free flour as a substitute for all-purpose flour.
