Ingredients

  • 1 rotisserie chicken, shredded
  • 2 small heads of romaine, shredded
  • 1 small head of cabbage, shredded
  • 2 large carrots, shredded
  • 1 cup green onions, finely chopped
  • 2 cups mandarin orange slices, about 4-5 oranges, sliced in half if large
  • 1 cup toasted nuts (almonds, cashews) or wonton chips
  • ¼ cup toasted sesame seeds

Ginger Soy Dressing

  • 1 large knob of ginger
  • 2-3 garlic cloves
  • ⅓ cup Clebby’s Avocado Oil
  • 2 tablespoons sesame oil
  • ¼ cup maple syrup or honey
  • ⅓ cup rice vinegar
  • ¼ cup soy sauce
  • Pinch of salt, fresh cracked pepper, and pinch of red pepper flakes

Directions

  1. Add all the ingredients for the ginger soy dressing to a blender and process until smooth. Season to taste, then set aside.
  2. Shred rotisserie chicken and add to a large bowl. Toss with a little dressing until the pieces are fully coated.
  3. Add shredded lettuce, shredded cabbage, shredded carrots, chopped green onion, mandarin orange slices, toasted almonds, and sesame seeds to the bowl.
  4. Pour the dressing over the ingredients and toss until the ingredients are fully dispersed.
  5. Divide among bowls to serve and garnish with toasted sesame seeds and sliced green onion.
