Ingredients
- 1 pound hot Italian sausage, casings removed
- ½ cup Clebby’s Avocado Oil
- 1 shallot, sliced
- 5-6 garlic cloves, minced
- 12 ounces broccolini, chopped
- 12 ounces of pasta of choice (campanelle, orecchiette, penne)
- 1 cup parmesan cheese, freshly grated
Directions
- Cook pasta according to package directions for al dente. Reserve two cups of pasta water, then drain pasta and set aside.
- Heat a large skillet over medium-high heat. Add small clumps of sausage to the skillet and let cook, stirring occasionally, until browned, about 5 minutes. Remove the cooked sausage and set aside in a bowl.
- Reduce heat to medium-low and add Clebby’s Avocado Oil with the sliced shallot and minced garlic.
- Saute until softened, then stir in chopped broccolini. Season with salt and pepper. Cook, tossing occasionally, until fork tender.
- Add the cooked pasta to the skillet with one cup of pasta water. Toss until the pasta is coated and the sauce thickens, adding a little more pasta water as needed.
- Once the sauce is glossy, remove from the heat and stir in shredded parmesan cheese. Season to taste, then serve.
