Sausage & Broccoli Pasta

Ingredients

  • 1 pound hot Italian sausage, casings removed
  • 1 shallot, sliced
  • 5-6 garlic cloves, minced
  • 12 ounces broccolini, chopped
  • 12 ounces of pasta of choice (campanelle, orecchiette, penne)
  • 1 cup parmesan cheese, freshly grated

Directions

  1. Cook pasta according to package directions for al dente. Reserve two cups of pasta water, then drain pasta and set aside.
  2. Heat a large skillet over medium-high heat. Add small clumps of sausage to the skillet and let cook, stirring occasionally, until browned, about 5 minutes. Remove the cooked sausage and set aside in a bowl.
  3. Reduce heat to medium-low and add Clebby’s Avocado Oil with the sliced shallot and minced garlic.
  4. Saute until softened, then stir in chopped broccolini. Season with salt and pepper. Cook, tossing occasionally, until fork tender.
  5. Add the cooked pasta to the skillet with one cup of pasta water. Toss until the pasta is coated and the sauce thickens, adding a little more pasta water as needed.
  6. Once the sauce is glossy, remove from the heat and stir in shredded parmesan cheese. Season to taste, then serve.
