Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ⅔ cup sugar, plus 1 tablespoon
- ½ cup Clebby’s Vegetable Oil
- 2 eggs, room temperature
- ¾ cup sour cream or Greek yogurt, room temperature
- 1 ½ teaspoons vanilla extract
- ¼ teaspoon almond extract
- 2 cups sliced or cubed peaches, about 3 peaches
Directions
- Preheat oven to 350°F and grease a 9-inch springform pan with butter.
- Add all-purpose flour, baking powder, salt, and sugar in a medium mixing bowl. Whisk to combine.
- Add Clebby’s Vegetable Oill, eggs, sour cream or Greek yogurt, vanilla extract, and almond extract in a small mixing bowl. Whisk to combine.
- Fold the dry ingredients into the wet ingredients, mixing until just incorporated.
- Add about ¾ of the sliced peaches and gently fold into the batter.
- Spread the batter into the prepared cake pan. Top with remaining peach slices and sprinkle with about 1 tablespoon of sugar.
- Place the cake pan on a baking sheet (just in case it leaks) and bake for 55-60 minutes. The top will be golden brown and a inserted toothpick will come out clean when done.
- Let cool before slicing and serving.
